On Sunday I served some of my favorite fall treats – so today I’m going to share with you one of my favorite childhood recipes.

Helen's Pumpkin Bars

Pumpkin Bars

4 eggs                                      2 c. sugar

1 c. vegetable oil                     1 can (15 oz.) pumpkin (or your own)

Mix above ingredients in a large bowl – sift the following and add to above, stir.

2 c. flour                                              ½ tsp. salt

2 tsp. baking powder                          2 tsp. cinnamon

1 tsp. baking soda                               ½ tsp. ginger

½ tsp. nutmeg                                     ½ tsp. cloves

Mix well and pour into greased and floured 12x18x1 inch pan. Bake at 350 degrees for 25-30 minutes.

Frosting:

1 (6 oz.) pkg. cream cheese                 4 c. powdered sugar

6 T. butter                                           1 tsp. milk

1 tsp. vanilla

Beat cheese, butter, vanilla and milk together until soft. Add powder sugar until correct consistency to spread.

They make a large batch, but they freeze well!

This recipe was one that my friend Helen used to make every fall with her own pumpkins. Just the smell of them baking brings back all those fond memories of stopping in at my friends Becky’s house after school and visiting with her mom, Helen. Helen has been gone for a lot of years already, but the warmth of her personality stays with me. Food is funny that way, isn’t it? Those tastes and smells are strong triggers for thinking of a loved one or unlocking memories.

Blessing Mix Bottle

Since I ran across the poem years ago I love to make Blessing Mix to give family and friends for Thanksgiving.  I’ve done them in boxes and bags so this year I decided to change it up a bit and do something a little different.

In riding back and forth to college with our daughter, Kaitlin, I’ve had 3 hours by myself in the car and discovered this great little thing called Starbucks ® mocha frappuccino during my road trips. I know, I know, you’re wondering where I’ve been right. Well I knew they were out there I just hadn’t given them a try – big mistake. So I limit myself to only buying them when I’m on the road coming back from dropping Kaitlin off at college – That way they are a treat.

Now the up side to this little discovery is these cute little bottles. I love to find ways to repurpose things, so I set them aside in my stash to use some day – And the Blessing Mix seemed like a great way to use them.  Unique packaging right? Now I need more bottles….hmmmm maybe I need to drink more frappuccinos! LOL

I’ve used the Thankful Tablescape Simply Created Kit to decorate my Blessing Mix Bottles. Don’t you love the Designer Series Paper Belly Bands and Chocolate paper ribbon the kit has? Everything precut to width and ready to go in this kit and the die cut leaves are just too cute.

For this 9 oz. bottle I cut the Tangerine Tango belly band and Chocolate paper ribbon to 9″, placed some Sticky Strip on each end and attached them to the bottle, one at a time so they didn’t buckle. Then I attached one of the die cut leaves using Glue Dots to the front and added an acorn that I had made from the 1 ¼” Burlap Ribbon cut using the Autumn Accents Die. (You’ll want to be careful since this ribbon will unravel – you can first adhere it to crumb cake card stock and then cut if you prefer to give it a bit more body.)

I trimmed the lid using Sticky Strip and a piece of the Tangerine Tango table tent that I cut ¼” wide (off the long side) and the top was simply a punched 1 ¾” Circle  from the same table tent.

I printed out my poem on Very Vanilla Card Stock, layered it on Chocolate Chip card stock and then layered it again on another of the table tents after sponging everything with Chocolate Chip Classic Ink.

I used the Stampin’ Chalk Marker that comes in the kit to write “Blessing Mix” on the name banner. Here is a close up of the poem.

To add the poem to my bottle I simply punched a hole in the top left hand corner of the poem and banner and used the Linen Thread included in my kit to tie it onto the bottle after wrapping it a couple of times I finished it off with a bow.

And of course the last step is to fill the bottle – feel free to try a couple of pieces of your Blessing Mix, after nothing has calories when you’re stamping, right?

Pumpkin Pie Goodie Gear Simply Created Kits

I was pleasantly surprised by just how much you get in this kit when I opened it!

Pumpkin Pie Goodie Gear Halloween

Here is a picture of my first goodie bag, basically following the suggested idea from the Holiday Catalog (on page 32) – and using only what was included in the kit. Quick and easy to do.

I used Bermuda Bay Classic Ink to stamp the sentiment using the coordinating stamp set Oh, Goodie (131886/131889) onto the precut banners included. Used the Pumpkin Pie stickers to make a “v” across the tag, and attached the sentiment. Filled the bag with some yummy candy corn M&Ms and finally I used the Bermuda Bay Baker’s Twine to tie a bow. How much easier can that get right?

And here is my “stepped” up version

For this one I used some fall peanut butter M&Ms to jump start my color pallet.  I still followed the same basic design, but I added a little texture to the tag using my Chevron Embossing Folder. Added a strip of Cajun Craze card stock beneath the Pumpkin Pie sticker and snipped the ends to create the same shape as the banner. I stamped the sentiment in Cajun Craze Classic Ink. Don’t you love that everything is pre cut for you in this kit? Added one of our pre cut leaves from the Thankful Tablescape Simply Create Kit (133463) and finished it off with our yummy Summer Starfruit 3/8″ Stitched Satin Ribbon (126846) to add a little sophistication.

Which one do you like the best? Both were a hit in my house. And yes, believe it or not I made it past my husband and son with the chocolate  – LOL. Good thing I almost got the goodie bags done before they found me!
